If you’re a person who wants to cook a freezer-friendly Easy Recipes then making Enchilada Casserole with Sweet and Potatoes maybe a good idea. It’s easy to make it but first you need to prepare some ingredients which are 1 pound of sweet potatoes, 2 ears of sweet corn, 1 teaspoon of olive oils, 1 ½ shredded cheese, 2 teaspoon of lime juice, 15 ounce pinto beans, 1/3 cup of sour cream, 6 inches of corn tortillas, 16 ounces green enchilada and chili sauce, you also need salt and pepper. First you need to peel and cut the potatoes into ½ inch cubes. You can place the cubed potatoes and corns on baking sheet or foil and add some oil, salts and peppers on it then roast it on a 4250F oven. You need a wooden spoon to stir it for 25 minutes until the vegetables are softer. Leave it to cool down a bit then cut the corn kernels.

Mix the corn, sweet potatoes, pinto beans, green chili sauce, cheese and line juice in a bowl and also add salt and pepper on it. Overlap the tortilla on a baking dish then add the sauce on it. add also half bean mixture, chili sauce and also cheese. You need to prepare an aluminum foil and spread the oil on it. Seal the casserole tightly with the aluminum foil and wrap it with plastic keep it to freeze for a month.
